Robert Haynes’ Recipe for 12 Anytime Muffins (Fruits of the Forest)
600g Plain (all purpose) flour
300g Castor (superfine) sugar
2.5 tablespoons baking powder
500mls Full fat (whole) milk
75mls Vegetable oil
2 Large Eggs
Pinch of salt
Your choice of soft fruit
Preheat oven to 180C (fan), 160C (electric) or Gas Mark 4.
Place all the wet ingredients into a bowl and whisk lightly together
Place all dry ingredients into another bowl and mix gently together
Add the flavourings to the dry ingredients
Combine wet and dry ingredients and quickly but gently mix together till only just combined.
Divide the mixture into a 12 hole muffin tray lined with muffin paper cases.
Sprinkle each muffin with a demerara sugar.
Bake for 12 – 15 minutes until well risen and lightly brown in colour.
