The author of two books on royal icing: 'Squires Guide to Making Iced Flowers' and 'Squires Guide to Making More Iced Flowers', his award winning work regularly features in cake decorating magazines.
He travels the world teaching his craft as well as running is own cake decorating school in Wales; the Cardiff Bay Studio.
He teaches contemporary English Overpiping on Craftsy too. We are delighted that Ceri teaches modern Royal Icing techiques in our kitchen.
She gained silver and gold awards in the Irish National Sugarcraft Show in Dublin in 2014 followed by two gold awards and Best in Class for her wedding cake design in the same event held in Cork in 2015.
Her work has featured in the American online Cake Central Magazine and she is now in demand to teach across the country. We are delighted to welcome Ellen to the kitchen to share her amazing skills in wafer paper.

Maggie is a former classical ballet dancer and she brought her unique artistic vision to life when she launched Maggie Austin Cake in 2010. She has since reached an international audience; from White House Christmas celebrations to Hollywood parties to royal weddings all over the globe. Maggie Austin designs display symmetry, elegance, and sophistication with the subtle yet unmistakable mark of haute couture.
A law graduate and trained in food art and patisserie in Japan, Maki has gained many awards for her baking and beautiful sugarcraft work.
Her work is regularly seen in cake decorating magazines and she is also the author of Cakes to Fall in Love With.
She shares her expertise worldwide and is always in demand. In our kitchen Maki teaches students how create her stunning signature Japanese style of cake decorating.
She also operates a free You Tube channel aimed at helping budding cake enthusiasts improve their cake decorating techniques.
She travels the world sharing her expertise and we are really pleased that she comes to our kitchen to teach sugar modelling.
